Brother and sister duo George Christodoulou and Diana Valsamis continue a family tradition that started over 40 years ago. Parents Con and Anna Christodoulou have established a legacy within the catering and hospitality industry dating back to 1977 and have now passed the baton onto their children. As co-owners George and Diana bring a wealth of knowledge to Jaaks and a warm dining experience reflecting their childhood. They are hands-on with the day to day running of the restaurant to ensure all aspects of the business is up to the highest standard.

Executive Chef, Jason McCauley leads the kitchen brigade. He brings with him over 25 years industry experience. Honing his craft at the much lauded 3-hatted Banc restaurant under the guidance of Chef Liam Tomlin. Moving onto Carpaccio in Leichhardt which was featured on series 2 of MasterChef Australia CH10. More recently as Group Executive Chef at both Meu Jardim and Metisse Group appearing on Snackmasters CH9. He applies his passion, experience and exceptional skill set into each and every dish.

Restaurant Manager, Harry Sarantidis heads the front of house team. His knowledge of food and wine has been garnered from experiences both here and abroad. He leads a confident and knowledgeable team that will ensure each diner has an enjoyable and memorable experience.
